In my garden at the moment we have tomatoes by the bucket load. So many shapes, sizes, colours and flavours. And while tomatoes are lush we must put them to good use. They have become an essential in all our meals throughout this summer. As they are in season these are the foods we naturally should be eating. These little red gems are loaded with vitamin C, betacarotene and lycopene (a vital anti-oxidant), what is most beautiful the lycopene is best absorbed when shared with a good fat such as olive oil or avocado. Hasn't mother nature thought of it all - love it. If we roll with the rhythmical patterns of foods in season we stock our bodies with the goodness that mother nature provides us with for that particular time, all making perfect sense.
My Spicy Bruschetta
Fresh chopped Tomatoes - my favourite are the smaller varieties for this - (as many as your heart desires)
A generous bunch of basil
2 Green chillies
1 Teaspoon of chilli flakes
2 Garlic cloves
1 Red onion
4 tablespoons of extra virgin olive oil
1 Tablespoon balsamic vinegar
Mix all ingredients and serve it on bread or as I have here.
